I love to cook with the sheet pan and can't wait to try out many of these variations! I also line the pan with aluminum foil and then parchment to avoid leaching anything from the pan - then - clean up is a breeze.

Where does the meat fat go? For some reason, I imagine my veggies soaking in a pool of chicken or salmon fat.

Hi, Amanda - Personally, we have never experienced our vegetables soaking in a pool of fat. The protein sources we use, even salmon,
are fresh leaving little juice/fat running all over the sheet pan. However, if this is a concern for you, we recommend
putting a cookie cooling rack on top of the sheet pan to slightly elevate your vegetables. We hope that helps!

I have also had luck by placing meat on one side of pan and then folding the foil or paper to form a dam like to keep fat away from rest of food. This works best with foil. Also you can use 2pans one for meat one for vegs.

For larger families, I recommend doing two pans at the same time! I typically load one up with veggies and the second for meat. If there is any extra I use throughout the week for lunches!

We are so happy you loved the recipes! To be honest, I (Sarah) just use a cheap $14.99 - 3 sheet pan set from HomeGoods. This way I have a variety of sizes on hand depending on what I am making. I hope that helps!

You can't go wrong with any of the Anolon baking pans. Size also varies based on how much you're cooking and your oven size. 11x17 is a pretty standard size though. =)

It's interesting that you point out that sheet pan recipes allow you to use fewer dishes when preparing meals. I'd like to avoid doing a lot of dishes, so I'm considering finding some sheet pan recipes that I can make. I'm going to search for a good blog that has sheet pan recipes.
