Greek Rice & Turkey Meal Prep Bowls
These Greek Rice & Turkey Bowls are a 30-minute meal that’s quick to make and have sweet-tart flavors. Pair with brown rice, or your favorite grain for any easy lunch or dinner meal prep!
Rice & Turkey Meal Prep Bowls Ingredients:
1 lb. ground turkey breast
2 cups brown rice, cooked
¼ cup chicken broth
1 tbsp. extra virgin olive oil
1 tbsp. lemon juice
¼ cup black olives
¼ cup sun-dried tomatoes, roughly chopped
1 tbsp. oregano
1 tsp. parsley
salt and pepper to taste
1 cup cucumbers, sliced
sliced lemons for garnish
Ingredients
- 1 pound ground turkey breast
- 2 cups Brown Rice cooked
- 1/4 cup chicken broth
- 1 tbs olive oil
- 1 tbs lemon juice
- 1/4 cup black olives
- 1/4 cup sun dried tomatoes, roughly chopped not packed in oil
- 1 tbs oregano
- 1 tbs parsley
- salt & pepper
- 1 cup cucumber slices
- fresh lemon slices
Instructions
- Place the turkey in a large skillet with extra virgin olive oil, salt, pepper, oregano and garlic and bring to a medium heat. Breakup the meat with a wooden spoon while the meat browns, about 5 minutes.
- Add the chicken broth and lemon juice and let the juices simmer 2-3 minutes with the meat.
- Add the black olives, chopped sun-dried tomatoes and parsley to the skillet. Stir to combine and cook another 5 minutes.
- Divide the meat mixture into 4 meal prep containers paired with brown rice, cucumber slices and lemons.
Did you use fresh oregano? Also, the green leaf that I see in the photos, are those spinach?
Great questions, Helen! We used fresh oregano and that is 1 cup baby spinach mixed in!
