We are always on the lookout for better and more flavorful dishes, and use what's in our pantry to our best advantage. This Greek rice meal prep does just that. If you've got some olives, some dried oregano and rice, and turkey (or even chicken), you're on your way to a bright and flavorful dish that calls to mind ingredients used a lot in Greek cooking: oregano, lemon, olives, cucumbers, and tomatoes.

It feels like summer, but you can eat this all year long!

Greek Rice & Turkey Meal Prep Bowls Ingredients

  • 1 lb. ground turkey breast
  • 2 cups brown rice, cooked
  • ¼ cup chicken broth
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. lemon juice
  • ¼ cup black olives
  • ¼ cup sun-dried tomatoes, roughly chopped
  • 1 tbsp. oregano
  • 1 tsp. parsley
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup cucumbers, sliced
  • Sliced lemons for garnish

How to Make Greek Rice and Turkey Meal Prep

With the exception of the rice, which is cooked separately, this is really a one-skillet dish, which makes things move faster, especially clean-up. Ground turkey cooks with some olive oil, salt, pepper, garlic, and oregano for a really flavorful and savory base. The rice gives it a nice starchy base, and the cukes and lemons add some crunch and acidity—a blast of brightness. 

How to Serve Greek Rice & Turkey Meal 

This is so good, it hardly needs much else. Feel free to add a great green salad with it, too. It's definitely best served hot, though.

Substitutions and Alterations

Ground chicken would also be really delicious here and maybe even pork. In a pinch, beef would work, but we like turkey and chicken the best. Those proteins keep this a little more light and bright; beef tends to feel a little more savory. 

If you don't have sun-dried tomatoes feel free to use halved cherry tomatoes instead for these rice and turkey bowls. 

White rice works here, too, as would quinoa or any kind of cauliflower rice. (You could make our cilantro and lime cauli rice into a lemon and parsley version, if you want!)

If you don't have black olives, kalamata would be delicious here. They are a classic Greek olive and more purple in color. You can even mix up the olive types if you like, which can be fun because most supermarkets have an olive bar with their salad bar. 

Use veggie stock (or water, in a pinch) if you don't have chicken stock.

Tips for Greek Rice and Turkey

There's no harm in upping the amount of fresh herbs in this dish. Doing so will really take the flavor to the next level. You can easily increase the parsley and oregano to a tablespoon each if desired. You can add it all at once or reserve some of those herbs for freshening it up when you serve these Greek rice and turkey bowls!

Ingredients

  • 1 pound ground turkey breast
  • 2 cups brown rice cooked
  • ¼ cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ¼ cup black olives
  • ¼ cup sun-dried tomatoes, roughly chopped not packed in oil
  • 1 tablespoon oregano
  • 1 tablespoon parsley
  • 2 cloves garlic minced
  • salt & pepper
  • 1 cup cucumber slices
  • Fresh lemon slices, for garnish

Instructions

  • In a large skillet with extra virgin olive oil, combine the turkey, salt, pepper, oregano, and garlic over medium heat. Breakup the meat with a wooden spoon while it browns, about 5 minutes.
  • Add the chicken broth and lemon juice and turn down the temperature to low and let it all simmer for 2 to 3 minutes.
  • Add the black olives, chopped sundried tomatoes, and parsley. Stir to combine and cook another 5 minutes.
  • Divide the meat mixture into 4 meal prep containers paired with brown rice, cucumber slices, and lemons.

    1. It was not... I just updated the recipe to include the brown rice. If you just make the mix, you could also eat it in lettuce cups or swap brown rice for cauliflower rice. Lots of options if you're looking to keep the calories down
