1 cup unsweetened vanilla almond milk

1 vanilla bean

½ cup full fat greek yogurt

½ cup chia seeds

2-4 stevia packets, or 4-6 tablespoons Swerve

Instructions
  1. Add coconut milk, almond milk, and vanilla bean to a blender, and blend until the bean is fully broken up.
  2. Add the greek yogurt and chia seeds, and pulse a few times to mix them in.
  3. Add in sweetener. Taste, and adjust the amount of sweetener.
  4. Let pudding sit for about 10 minutes, and pulse at about 3 minute intervals, to prevent the chia seeds from clumping.
  5. Serve with fresh or frozen berries.
