This healthy-ish and plant-based twist on classic general tso’s chicken is completely delicious and so easy to make!  

General Tso’s Cauliflower Bowls 

General Tso’s Cauliflower Bowls  Ingredients: 

Cauliflower: 

  • 1 Large Head Cauliflower (cut into florets) 
  • 2 Tbsp. Avocado Oil 
  • 1 tsp. Corn Starch 
  • 1 Tbsp. Tamari or Coconut Aminos 

General Tsos Sauce 

  • 4-5 Dried Small Red Chilies 
  • 2 C. Cooked Short Grain Brown Rice 
  • 1 C. Sugar Snap Peas or Snow Peas (lightly steamed) 
  • 1 C. Vegetable Broth or Stock 
  • 1/4 C. Tamari or Coconut Aminos 
  • 3.5 Tbsp. Coconut Sugar 
  • 2 Tbsp. Grated Ginger 
  • 2.5 Tbsp. Rice Vinegar 
  • 1 Tbsp. Grated Garlic 
  • 2.5 tsp. Sesame Oil 
  • 2.5 tsp. Sriracha  
  • 2 tsp. Tahini 
  • 1 tsp. Corn Starch 

Optional: Black Sesame Seeds and Green Onions

Instructions
  1. Preheat oven to 425℉ and line a large baking sheet with foil. Set aside. 
  2. In a mixing bowl, toss together all cauliflower ingredients until cauliflower is well-coated. Place in oven and roast for ~20-25 minutes (flipping halfway through) until tender and slightly browned. 
  3. While the cauliflower roasts, prepare the sauce by whisking all ingredients until well-combined. 
  4. Next, heat sauce mixture in a large skillet over medium/high heat until boiling. Then, lower heat and simmer (stirring occasionally) for ~15-20 minutes or until slightly thickened. 
  5. Layer cauliflower on top of rice, alongside snap peas and a drizzle of sauce. Top with optional ingredients. 
  6. Serve, store, and enjoy!
