Carrot Meatballs With Mint Cauliflower Rice Ingredients:

For the Meatballs 

1 lb. lean ground beef, chicken or turkey

1 large egg

½ cup grated carrots

1 tsp. Italian seasoning

½ tsp. crushed red pepper flakes

salt & pepper to taste

2 tbsp. extra virgin olive oil

For the Cauliflower Rice 

4 cups riced cauliflower

1 tbsp. lemon juice

4 mint leaves

salt & pepper to taste

½ cup water

Instructions
  1. In a large bowl, whisk together egg with Italian seasoning, salt, pepper and red pepper flakes.
  2. Add carrots and ground meat to the bowl. Using your hands, mix the ingredients thoroughly throughout the meat. Using a small ice cream scoop, roll the meat into balls until 18 meatballs are made and the meat is gone.
  3. Heat a medium skillet over medium-high heat. Add oil to the pan and heat 4 minutes then add the meatballs to the pan. 
  4. Cook meatballs 5 minutes then flip to cook on the other size another 5 minutes. Rotate the meatballs a few more times in the pan cooking 1-2 minutes until cooked through. Remove meatballs from the pan and place on a plate.
  5. Add ¼ cup water to the skillet with riced cauliflower. Cook 5 minutes until softened then add lemon juice and mint leaves. Stir to combine.
  6. Divide the meatballs and cauliflower rice into 4 even servings placing them in meal prep containers with fresh lemon wedges.

  1. Delicious! I bought frozen, pre-packaged cauliflower rice and didn’t use the mint, but it was still delicious.

  2. I DON’T SEE ANY CALORIE COUNT, THE MEALS LOOK LOVELY BUT I WOULD LIKE TO KNOW HOW MANY CALORIES PER MEAL I AM CONSUMING. IF IT IS HERE AND I HAVENT SEEN IT MY APOLOGIES.

    • Hi Robyn – we only share the macros on most recipes, but due to a high request for calories we have started including them. You can easily calculate the calories by adding together your protein and carb grams and multiplying by 4. Then multiplying your fat grams by 9 and finally adding together the total fat + total protein/carb numbers.

  3. I use zuchini instead of carrot and ground turkey. SO YUMMY. also a table spoon of Trader Joe’s tzaziki yogurt. T dip the meatballs in is FABULOUS!
