They are the perfect meal prep recipe when you are in need of a meal (or snack) but also have a gazillion things to get done! 

They are a perfect finger food (hello, dunk and eat!) with a bit of “sit down” mixed in. You can munch on those juicy and tasty chicken patties, after dunking them into that pasta sauce, and then take a couple of minutes and sit down to enjoy the greens on the side.

  • 1 lb. ground chicken  
  • 2/3 cup grated Parmesan cheese  
  • 1 large egg  
  • 2 tsp Italian seasoning  
  • 1/4 tsp garlic powder  
  • 1/2 tsp sea salt  
  • 1/4 tsp red pepper flakes  
  • 1 tbsp olive oil for cooking  
  • 1/2 cup no added sugar marinara or pasta sauce (Rao’s Homemade Marinara)  

For The Greens

  • 4 cups chopped chard, kale, or collard greens  
  • 2 tbsp olive oil  
  • 1/4 tsp sea salt  
  • Cracked black pepper to taste
