These easy keto crackers are made with just 4 ingredients and take about 5 minutes to prepare and put in the oven. Watch them closely as almond flour burns faster than wheat flour. Serve these crackers with cheese and veggies or nuts for a healthy on-the-go keto snack or light meal.

Ingredients

For the crackers

  • 1 1/4 cup almond flour not almond meal
  • 1 tbsp flaxseed meal
  • 1 tsp thyme
  • 1/2 tsp Sea Salt
  • 3 tbsp Water

For serving

  • 4 baby bell cheese
  • 1/2 cup macadamia nuts or almonds
  • 1/2 cup cucumbers optional
  • 1/2 cup Cherry Tomatoes optional

Instructions

  • Preheat oven to 350 degrees.
  • Mix together all ingredients except water. Add the water, and mix to combine into a dough. If the dough seems too sticky, add a little extra almond flour.
  • Use a large piece of parchment and place the dough on one side, and fold the other side onto the top. Use a rolling pin to spread the dough out into a thin sheet.
  • Peel the top layer of parchment off, and use a large knife to cut crackers into 1-inch squares.
  • Carefully slide the crackers still on parchment onto a baking tray.
  • Bake for 20-25 minutes, carefully watching toward the end to prevent over-browning.
  • Allow crackers to cool for 30 minutes, and then break into individual pieces
  • Pack boxes with cheese, veggies, or nuts.

  1. The Thai Chicken Lettuce wraps are not Keto at all… one serving is over 18 carbs. Most keto diets have a maximum of 20-25 carbs per day. Not likely to stay in KETOSIS if you go much higher than that in a whole day.

    Not long started the Keto diet myself. Balancing my protein intake has been the biggest challenge so far, so am deffo going to add a few of these to my meal plan to balance things out. 😀

  3. I am 53 old women with type 1 diabetes an my A1C was 7.6 to 6.3. I’ve been on the keto diet for three month only lost 12 pounds out 20 to lose. I should start walking to get rest of weight off with diet.

  4. Looks good, I’m looking at meal-prep as a way to stay on track with the keto program as well as streamlining my cooking time and food purchases, and stay flexible with my husband’s and my dietary needs.

  5. Not many of these would be good to make ahead and store for the entire week or freeze. Maybe for a day and that’s about it as far as being able to be prepped.
