1 tbs olive oil

2 cups cooked brown rice
1 1/2 cup frozen corn (or fresh if in season)
15 oz Steamed kidney beans (http://www.melissas.com/Steamed-Red-Kidney-Beans-p/1175.htm)
1 avocado, diced

One Pan Southwestern Meal Prep
Instructions
  1. Heat olive oil in skillet over medium heat
  2. When oil is hot add in sliced steak strips
  3. Saute steak until cooked half way through (about 3 minutes per side)
  4. Add in hatch chili salsa, brown rice, corn and kidney beans
  5. Mix
  6. Cover and cook for 5 minutes
  7. Mix again
  8. Cover and cook an additional 5 minutes or until bubbling
  9. Evenly divide between meal prep containers
  10. Finish off with diced avocado, if desired
