I've made a lot of cheesesteak-inspired meal preps over the years, but lately I've been cooking them almost exclusively on the griddle.
You get more surface area, better browning on the beef, caramelized vegetables, and those crispy edges that are hard to replicate in a skillet.
And during Hatch Chile season, I've found an even better variation: Hatch Chile Philly Cheesesteak.
Philly might not approve of this one, but Hatch Chile fans will understand immediately.
The smoky, slightly spicy flavor of roasted Hatch Chiles works incredibly well with thinly sliced ribeye, onions, mushrooms, and melted cheese.
Below, I'm giving you both options: make the original low-carb Philly cheesesteak meal prep in a skillet, or fire up the griddle and make my Hatch Chile version.

A Little Cheesesteak History
According to Visit Philadelphia, the original cheesesteak was created in the 1930s by brothers Pat and Harry Olivieri, who swapped their usual hot dogs for thin-sliced steak and onions on a roll. A passing cab driver loved it so much he asked for one, and the rest is history. The iconic Pat's King of Steaks still stands in South Philly today, open 24/7!
While we respect the OG, this low-carb twist brings the Philly flavor home... no bun required.

Why Cheesesteak Works for Meal Prep
Cheesesteak might not be the first food you think of when you hear "meal prep," but that's exactly why I like it.
You've got your protein, plenty of vegetables, and a ton of flavor without needing a complicated recipe.
For a low-carb meal prep, skip the roll and portion the beef and vegetables directly into your containers.
Want the full cheesesteak experience? Toast a hoagie roll on the griddle and pile everything inside.
It's the same basic prep with two completely different ways to eat it.
Ingredients
- 12 oz grass-fed sirloin steak, thinly sliced
- ½ tablespoon olive oil (plus more if needed)
- 1 medium bell pepper, thinly sliced
- Or sub for 2 Hatch Chile Peppers
- 1 medium onion, thinly sliced
- 6 oz portobello mushrooms, sliced
- 2 tablespoon Dale's seasoning sauce
- can sub for worcestershire sauce
- Salt and pepper, to taste
- 3 slices provolone cheese

How to Make Low-Carb Philly Cheesesteak (Two Methods)
Skillet Method
- Serve or portion: Garnish with herbs, divide into containers, and let cool before refrigerating.
- Prep the veggies: Slice your onions, peppers, and mushrooms.
- Cook the vegetables: Heat olive oil in a large skillet over medium-high heat. Add onions and bell peppers and cook for 5 minutes, stirring occasionally. Add mushrooms and cook for another 3 minutes until tender. Remove and set aside.
- Sear the steak: In the same skillet, add sliced steak, season with salt and pepper, and cook for 3-4 minutes until browned.
- Combine & melt: Add the vegetables back in, pour in Worcestershire sauce, and stir to coat. Lay slices of provolone on top, cover for 1 minute until melted.



Griddle Method (Meal Prep Pro Tip)
Using a flat-top griddle or Charbroil Pro Series Grill w/Griddle attachment lets you cook everything faster, and you'll get that authentic "grilled steak shop" sear.
- Preheat your griddle to medium-high (around 400°F). Lightly oil the surface.
- Cook the veggies: Place onions, peppers, and mushrooms in separate zones. Sauté for 5-6 minutes, flipping with a metal spatula until caramelized.
- Add the steak: On an open area of the griddle, add the thinly sliced sirloin. Season and sear quickly for 2-3 minutes.
- Combine and melt: Mix steak and veggies together, drizzle Worcestershire over the pile, and layer provolone slices on top. Cover with a metal dome for 30-45 seconds to steam and melt the cheese.
- Serve: Use a large spatula to scoop servings directly into your meal prep containers.
💡 Pro tip: The griddle method works perfectly if you're cooking for multiple people or want to meal prep several portions at once. Cleanup is quick... just scrape, oil, and wipe!
Turn It Into a Hatch Chile Philly Cheesesteak Sandwich
If you're not worried about keeping this recipe low carb, grab a good hoagie roll.
Split the roll and toast the inside directly on the griddle.
Then load it up with:
- Thinly sliced ribeye
- Melted cheese
- Hatch Chile
- Caramelized onions
- Mushrooms
The Hatch Chile adds a smoky heat that completely changes the traditional cheesesteak.
Meal Prep vs. Sandwich: Which Should You Make?
This is where I think this recipe becomes especially useful.
For meal prep:
Skip the bread and divide the beef, vegetables, and cheese into containers. You get all the cheesesteak flavor while keeping the meal lower in carbohydrates.
For dinner or game day:
Toast the hoagie rolls and make full Hatch Chile cheesesteaks.
For a combination of both:
Cook one big batch on the griddle. Make sandwiches for dinner and portion the remaining filling into containers for lunch.
That's my favorite way to cook. One cooking session, multiple meals.
Why I Prefer Ribeye for Cheesesteak
You can absolutely make cheesesteak with sirloin, which is what I use in the original meal prep recipe below.
But if I'm making a full cheesesteak on the griddle, ribeye is my first choice.
It has enough fat to stay tender during high-heat cooking, and thin slices develop great crispy edges without becoming dry.
If ribeye isn't available or doesn't fit the budget, thinly sliced sirloin is still a great meal prep option.

Storage and Reheating
Store the cheesesteak filling in airtight meal prep containers in the refrigerator for up to 4 days.
If you're making sandwiches, I recommend storing the hoagie rolls separately rather than assembling everything ahead of time. This keeps the bread from getting soggy.
To reheat, warm the beef and vegetables in a skillet or on the griddle until hot. You can also microwave individual portions for 1-2 minutes.
If you're making a sandwich, toast the roll separately and assemble it after reheating.

Absolutely. Thin-sliced chicken breast or thighs work great for a leaner option.
Provolone is the most authentic, but mozzarella or white American also work well.

- Remove from the stovetop, allow to cool slightly, and then divide among your meal prep containers.
- Top with fresh herbs, if desired (such as parsley).

Made this last night and it is delicious. Next time I will cut down on steps and cooking time. Just throw peppers, onion and steak in at the same time and cover with a lid. The mushrooms are really the only ingredient that you should add later, prior to the cheese.
