With summer finally here we are more interested in being outside than being stuck in the kitchen meal prepping all day. But, we also know that if we don’t meal prep, we won’t look as good in our bathing suits because those fat, high-calorie meals will be what we reach for when it comes time to eat. We know you don’t have time for that! We have worked way too hard this past winter — working out and eating healthy so that we can rock those summer bods!
So, what is the solution? This Gluten Free Caesar Pasta Salad Meal Prep recipe! Why? Because it is made in 15 minutes, is packed full of protein (27g per 3ounce serving) and fiber from the Chickapea Pasta and is made in a single pot! Plus, Chickapea pasta contains only 2 ingredients; chickpeas and lentils, so you know that you aren’t getting a whole bunch of artificial ingredients or sugars. While your pasta is cooking, all you need to do it cut the veggies. When the pasta is done just toss it all together, divide between your meal prep containers and then head straight to the beach — maybe with one of these salads in hand!
Gluten Free Caesar Pasta Salad Meal Prep Ingredients:
1 box Chickapea Organic Pasta
5 cups romaine lettuce, chopped
1 cup favorite Caesar dressing
1/3 cup shredded parmesan cheese
3/4 cup croutons
1/2 cup red onion, thinly sliced, optional
1.5 cups cherry tomatoes, sliced, optional
lemon wedges, optional

- 1 box Chickapea Organic Pasta
- 5 cups romaine lettuce chopped
- 1/2 cup red onion thinly sliced
- 1/3 cup shredded Parmesan cheese
- 1 cup ranch dressing we used Primal Kitchen brand*
- 3/4 cup croutons we used Fox Hill Kitchen brand*
- 1 1/2 cup Cherry Tomatoes sliced
- lemon wedges if desired
- Cook chickapea pasta according to directions.
- While pasta is cooking chopped and slice vegetables.
- When was is done drain and return to the pot.
- Allow pasta to cool.
- When pasta has cooled add in remainining ingredients.
- Toss together.
- Evenly divide among meal prep containers or serve immediately at your next BBQ.
