1 can chickpeas, rinsed and drained
1 large cucumber, sliced
1 bell pepper, red or yellow, sliced thinly
2 cups cherry tomatoes, halved
1 red onion, sliced thinly
1 cup black olives
1 large avocado

Dressing:
¼ cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon lemon juice
1 teaspoon date syrup (or honey)
1 teaspoon dijon mustard
½ teaspoon Italian seasoning
¼ teaspoon sea salt (or to taste, optional)

Ingredients

Salads

  • 8 cups baby spinach
  • 1 can chickpeas drained and rinsed
  • 1 large Cucumber sliced
  • 1 medium bell pepper thinly sliced
  • 2 cups Cherry Tomatoes halved
  • 1 medium red onion thinly sliced
  • 1 cup black olives sliced
  • 1 large Avocado

Dressing

  • ¼ cup olive oil
  • 3 tbs balsamic vinegar
  • 1 tbs lemon juice
  • 1 teaspoon Honey or date syrup
  • 1 teaspoon Dijon Mustard
  • ½ teaspoon italian seasoning
  • ¼ teaspoon Salt

Instructions

  • Add all dressing ingredients to a jar, and shake to combine.
  • Layer veggies and chickpeas on beds of spinach.
  • Add avocado and dressing right before serving.
