Crispy zucchini chips are so good in the air fryer! A little gluten-free breading and a little time in the air fryer and you've got yourself a quick, healthy snack!

Are you looking for a tasty and healthy snack that's easy to make and perfect for satisfying your cravings? Look no further than air fryer zucchini chips! These crispy and delicious chips are made using a simple and straightforward process that involves thinly slicing zucchini and cooking it in an air fryer. The result is a snack that's bursting with flavor, low in calories, and packed with nutrients. It also happens to be gluten-free, because we're using gluten-free breadcrumbs and flour to make this happen.

Air Fryer Crispy Zucchini Chips Ingredients

  • 2 eggs
  • 2 small zucchini
  • ⅔ cup gluten-free breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ¼ cup gluten-free flour
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 1 cup gluten-free ranch dressing

One of the best things about air fryer zucchini chips is that they're a healthy and guilt-free snack that you can enjoy anytime. Zucchini is a low-calorie vegetable that's rich in vitamins and minerals. These include Vitamin C, potassium, and folate. Plus, cooking zucchini in an air fryer eliminates the need for added fat and calories that come with deep frying.

Another thing that's awesome? Making these in the summertime is a great way to use fresh zucchini. Chances are, you or someone you know will grow this vegetable, which tends to be prolific, and you'll find some on your doorstep. And then the next question you may have, once you've exhausted all the options (which invariably include zucchini quick bread), is "What do I do with all this zucchini?!?"

How to Make Crispy Zucchini Chips

Slice the zucchini thinly. Get your bowls set up for dredging and dipping. Flour goes in one bowl, beaten eggs in another, and then the breadcrumbs, finally, in a third. Once they're all dipped and ready to go, fry them in the air fryer, most likely in batches. And it's that easy, we promise.

If you don't have an air fryer, these are easy to make in the oven as well. This baked zucchini chips recipe breaks it down for you, but it's really easy. It'll just take a bit more time in the oven.

How to Store and Serve Crispy Zucchini Chips

Well, like most things that come out of the air fryer, these are best as soon as they're made, when they're warm but not too hot to eat. We love them with dippable sauces and dressings like homemade ranch (it's a revelation, try it!), blue cheese, or even a good store-bought Caesar or goddess dressing.

You can meal prep these, and that's how we've shown them here. You might consider reheating them quickly in the air fryer when serving, but you don't have to. They will get a bit more crispy again if you do that. They will get a tad soggy in the fridge if you go the prep route.

Substitutions and Alterations

Season the breadcrumbs however you like. We just happen to enjoy Italian seasoning. Thyme, parsley, marjoram, chives, dill, all of those would work. Additionally, if you don't need to make this as a gluten-free recipe, feel free to use regular breadcrumbs and all-purpose flour.

Ingredients

  • 2 eggs
  • 2 small zucchini
  • ⅔ cup gluten-free breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ¼ cup gluten-free flour
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 1 cup gluten-free ranch dressing

Instructions

  • Slice zucchini into ¼-inch thick slices.
  • Add flour to a small bowl, beat eggs in a second small bowl, and combine breadcrumbs, Parmesan cheese, Italian seasoning and salt in a third bowl.
  • Working in 2 batches, dip each slice of zucchini in flour followed by egg mixture allowing excess to run back into bowl. Coat in breadcrumb mixture and place in air fryer leaving a small amount of space between each zucchini slice.
  • Air fry at 400ºF for 8-9 minutes. Repeat with remaining zucchini.
  • Divide zucchini chips among 4 compartments of 4 MPOF snack containers. Divide ranch dressing among remaining 4 compartments.
