Instructions
  1. Pre heat oven to 375 degrees F
  2. Toss potatoes, onion and diced bacon together with oil
  3. Place on a lined baking sheet
  4. Add chicken to the pan
  5. Sprinkle with salt and pepper
  6. Bake for about 20 minutes or until chicken is cooked through and potatoes are fork tender
  7. Drizzle with ranch dressing and top with chives
  8. Serve on top of spinach, if desired.
