Cauliflower Fried Rice with Legumes and Chicken Shish Kabobs Ingredients:
For Cauliflower:
- 1 large cauliflower
- 1/2 cup dry lentils
- 1 canned or 1 full cup cooked chickpeas
- 1 large white onion
- 2 tbsp avocado oil
- 1–2 tsp cumin
- 1 tsp salt
For chicken:
- 1.5 lbs chicken breast (skinless & boneless)
- 8 medium wooden skewers
- seasonings: salt, smoked paprika, curry, onion powder, garlic powder

- 1/2 cup dry lentils
- 1 cup chickpeas cooked

Instructions
- Wash cauliflower, cut into little pieces and place cauliflower chunks in a food processor. Pulse until broken down into rice size pieces. Set aside.
- In a pan bring about 2 cups water to a boil, add lentils and cook until tender. Drain and set aside.
- Preheat avocado oil in a non-stick skillet over medium heat. Cut onion into small pieces. Toss in the pan, cook and stir about 5–6 minutes. Add in the cauliflower rice, sautée and stir for 8 minutes. Add in the chickpeas and cooked lentils. Cook 3 minutes.
- Cut chicken breast into cubes. Season with all seasonings. Mix well either with a spatula or with your hands. Thread seasoned chicken cubes alternately onto wooden skewers. Cook 3–4 minutes per side in a non-stick grill pan over medium heat.
- Serve fried cauliflower rice evenly into containers and serve 2 chicken shish kabobs each in container over rice.
