Take 4 thawed Chicken breasts and season both sides with sea salt, pepper, and Italian seasoning. To make the meat more tender, place it in wax paper and lightly pound with a marinating prep tool (aka meat mallet) about 10 times per breast.

Place the seasoned, tenderized meat in a glass baking dish and cover with foil. Bake chicken as directed and then remove the foil and top with pizza sauce, shredded mozzarella cheese, and ham and pineapple. Return to the oven and bake until bubbly and starting to brown. Remove from the oven and let cool. Add parmesan and red chili flakes. Serve with steamed broccoli or any other favorite vegetable.

Ingredients

  • 4 medium Chicken Breast *Nutrition calculated using 1 pound
  • 1 tbs italian seasoning
  • salt & pepper to taste
  • ¾ cup pizza sauce
  • 1 cup Shredded Mozzarella Cheese *we used full fat
  • ½ cup Canadian bacon or ham choped
  • ½ cup pineapple diced
  • parmesan & red pepper flakes for garnish, optional
  • 2 cups Broccoli steamed

Instructions

  • Preheat oven to 425 degrees F.
  • Add chicken breasts to a baking dish, and season both sides with sea salt, pepper, and Italian seasoning.
  • Bake chicken for 18 minutes, until it’s slightly undercooked.
  • Top chicken breasts with pizza sauce, sliced or shredded mozzarella, ham and pineapple. Return to oven to bake for another 10-12 minutes, until the cheese is starting to brown and bubble.
  • Serve with steamed broccoli.

  2. Tried this tonight and absolutely loved it!! Added some extra italian seasoning on top to give it more of the “pizza” taste and it totally worked. Was pretty easy to make as well

    Very tasty and I love that it's made with things I usually have on hand. I replaced each chicken breast with 2 thighs because I just prefer dark meat, and it's also easier to take just the amount you want rather than cutting large pieces in half. I've made it with and without the ham and it's good either way. As a Canadian, I feel obligated to say this every time a recipe calls for Canadian Bacon, there is no such thing. If you order bacon and eggs here you'll get exactly the same thing you get in the US. What you have decided to call Canadian bacon already had a name. It is called Back Bacon.. My grandparent's generation would have called it peameal bacon in reference to the cornmeal crust around the edge. In Britain you'll see it called back bacon as well. Or have you renamed that to British bacon? 😉 So to summarize Canadians have bacon and back bacon. Brits have streaky bacon and back bacon, and Americans have bacon and have renamed back bacon from Britain & Canada as Canadian bacon, which of course sounds silly to us and probably offends the Brits since you've given us ownership.
