We love this sweet potato breakfast prep, with sausage, eggs, and spinach. It's easy!
Meal preppers around these parts definitely have a thing for sweet potatoes. And sweet potato nutrition might have something to do with it. They're loaded with fiber, vitamins, and minerals and add a little sweetness to your meal without adding sugar. In terms of their flavor profile, sweet potatoes also provide a great contrast to other ingredients, especially those that are savory.
Case in point? This egg, sweet potato, and sausage breakfast meal prep! It's ideal for paleo and Whole30 diets. And, of course, it works for those who eat gluten-free and engage in full-on, omnivore eating habits!
Egg, Sweet Potato, and Sausage Breakfast Ingredients
- 12 ounces sweet potatoes, about 3 potatoes
- 8 large eggs
- 4 chicken sausage links
- 5 ounces baby spinach
All you need is four ingredients to make this breakfast meal prep. Ok, five maybe, if you could olive oil, but we're not—except where it's needed for the nutrition calculation! (A little bit of macro calculation humor for you!)

Ingredients
- 3 ea sweet potatoes chopped
- 4 ea chicken sausage links
- 8 ea eggs
- 5 oz spinach 1 large bag
- 1 tablespoon Olive oil
- Salt and Pepper to taste
Instructions
- Dice all the sweet potatoes and pour olive oil in a pan and heat it.
- Once it’s heated, add the diced sweet potatoes and sprinkle with sea salt, cover it with a lid and stir occasionally until the potatoes have softened and set them to the side.
- Then, add spinach and olive oil to a pan and sprinkle with sea salt.
- Cook on medium heat and stir lightly until spinach is fully cooked.
- Spray a pan with olive oil cooking spray and add in the sausage until they are fully heated.
- Lastly, crack all the eggs in a bowl and stir until fully mixed.
- Then spray a pan with olive oil cooking spray and add in the eggs.
- Sprinkle with salt and pepper and cook on medium heat until ready.
- Add everything to the containers and enjoy!
