Baked Breakfast Quinoa and Spinach Bites Meal Prep

This one is perfection because it addresses our favorite yet most difficult-to-prepare meal of the day: breakfast. I'm not sure about you, but getting out of bed in the morning is hard enough. Sometimes breakfast is just out of the question. But if you prep for the week with these baked breakfast quinoa bites, all you have to do is heat a few up in the morning and you're good to go.

Cheesy Quinoa Spinach Breakfast Cup Meal Prep recipe

Ingredients:

  • 1 cup Cooked White Quinoa
  • 3 each Large Eggs
  • 1 cup Shredded Mozzarella Cheese
  • 1 cup Fresh Melissa's Produce Spinach
  • ¼ teaspoon Sea Salt
  • ⅛ teaspoon Ground Pepper
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Dried Italian Seasoning

Ingredients

  • 1 cup Cooked White Quinoa
  • 3 each Large Eggs
  • 1 cup Shredded Mozzarella Cheese
  • 1 cup Fresh Melissa's Produce Spinach
  • ¼ teaspoon Sea Salt
  • teaspoon Ground Pepper
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Dried Italian Seasoning

Instructions

  • Preheat oven to 350°F
  • Spray 12 mini muffin tins with nonstick spray. Set aside.
  • Combine all ingredients and transfer to mini muffin tins
  • Bake for 25-30 minutes or until browned.
  • Immediately transfer to cooling rack.

Store leftovers in refrigerator. Reheat in oven, 350°F for about 10 minutes.
