There's something to be said for meal-prepping potatoes, which we tend to think as a labor-intensive food to cook simply because they take some time. But the air fryer is your friend when it comes to meal prep and especially healthy meal preps with potatoes. After all, you're basically looking at a mini convection oven that sits on your countertop. And that means your oven is free for other tasks.
These air fryer potatoes are a dream, and baby potatoes in particular are kind of fun. They're smaller and so that helps them cook faster, too. Make a batch of these to meal prep and have them at the ready all week.
Air Fryer Baby Potatoes Ingredients
- 24 oz. baby potatoes
- 1 tablespoon olive
- ½ teaspoon sea salt
- ⅛ teaspoon black pepper
How to Make Air Fryer Baby Potatoes
Wash the potatoes and scrub off any dirt and pat them dry. Transfer them to a medium bowl and drizzle with olive oil. Use your hands to rub the oil into the potatoes so they're as evenly coated as you can get them. Then, sprinkle with salt and pepper and transfer them to the air fryer. It's so simple. Rubbing the skin with olive oil helps them get crispy in the air fryer.
How to Store and Serve Baby Potatoes
You might have to resist the urge to eat some of these right out of the air fryer. Or not! Serve these baby potatoes right away with just about anything! Potatoes like these go well with your morning eggs, or with a salmon, steak, or chicken dinner. They're crispy on the outside and fluffy on the inside. You could even use them as a the basis of a potato salad; they're the ideal shape. All you'd need to do is cut them in half, or maybe quarters.
Store these air fryer potatoes in the fridge in an airtight container for up to 5 days. If you want to reheat them, you can pop them back into the air fryer for a few minutes, or cut them in half and pan fry them in a little bit of oil (cast iron works great here).
Substitutions and Alterations
Salt and pepper do wonders with the humble potato, but feel free to use other herbs or spices in addition to salt and pepper. We like thyme, rosemary, parsley, paprika, za'atar, Old Bay seasoning—the possibilities are endless. Potatoes are kind of a blank slate, you know?

Ingredients
- 24 oz. baby potatoes

- ¼ teaspoon black pepper or to taste
Instructions
- Preheat the air fryer to 350ºF degrees.
- Rinse and dry potatoes and add to a medium mixing bowl. Drizzle with olive oil and using your hands, rub the olive oil into the skins as evenly as possible. Sprinkle with sea salt and pepper.
- Add potatoes to the basket of the air fryer. Fry at 350ºF for 20 minutes, shaking the basket after 10 minutes for even frying. Cool potatoes for 2 to 3 minutes before serving.
