Get your sweet fix without all the sugar! These gluten-free, vegan protein bars contain less sugar and more protein than a typical candy bar for a hunger curbing snack with zero guilt.
Vegan Snickers Protein Bars Ingredients:
For Nougat Layer
- 1 cup gluten-free flour (or regular flour)
- ⅓ cup unsweetened vanilla vegan protein powder (garden of life brand)
- 2 tablespoon agave nectar (or sweetener of choice)
- ⅓ cup unsweetened almond milk (or milk of choice)
- 2 tablespoon melted coconut oil
For Filling
- ¼ cup pitted dates, soaked in ¼ cup hot water for 5 minutes
- ⅓ cup natural drippy unsweetened peanut butter, at room temperature (can sub for any drippy nut or seed butter)
- 2 tablespoon roasted salted peanuts, coarsely chopped (can swap for any nut)
For Chocolate Drizzle
- ¼ cup unsweetened vegan dark chocolate chips (or chocolate of choice)
For Serving
- 2 cups sliced strawberries

Instructions
- Line a loaf pan with parchment paper overlapping sides. Combine flour, protein powder, coconut oil, agave nectar and almond milk in a small bowl and mix thoroughly to moisten. Spread mixture in the bottom of the prepared pan and press with damp fingertips to form the pan. Freeze for 30 minutes.
- Combine dates with water from soaking and peanut butter in a food processor and blend until smooth. Spread filling over the nougat layer and sprinkle with chopped peanuts. Freeze an additional 30 minutes.
- Melt chocolate chips over a double boiler. Lift bars from loaf pan and slice into 6 equal pieces. Drizzle chocolate over the top of each bar. Place on a wax paper line tray or plate and freeze for 10 minutes to firm.
- Divide sliced strawberries between 6 (½ cup) compartments of snack containers. Add 1 snickers bar to each remaining compartment.
