Healthy Oatmeal Muffins

Breakfast Muffin Meal Prep

Make a batch of these Healthy Oatmeal Muffins so you can wake up and head out the door in the morning with a few of these portable treats! This recipe takes two of your favorite breakfast items, oatmeal and muffins and combines them into one protein packed, sweet recipe! They also work well for an afternoon snack or even a pre/post workout food!

Healthy Oatmeal Muffins Ingredients:

  • 2 + 1/2 cup old fashioned oats
  • 2 cups almond milk
  • 2 scoops protein powder ( I used pea protein powder)
  • 2 whole eggs
  • 1 banana (or 1/2 cup apple sauce)
  • 1 tsp cinnamon, baking powder, vanilla extract
  • 1 tbsp honey in texture (+ drizzle about 1 tbsp on baked muffins – optional)
  • 1 + 1/2 tbsp melted coconut oil ( he uses 2 tbsp)
  • pinch of salt

extras:

  • I also added about 1/8 tsp allspice
  • 1/4 cup frozen blueberries (or fruit of your choice)-(he uses 1 cup frozen raspberries + 1 cup frozen blueberries)

Instructions
  1. Preheat oven over 375 F.
  2. Mix all dry ingredients in a large bowl. Mash banana in a small bowl and mix with all wet ingredients.
  3. Pour wet mixture over dry mix, gently combine mixing.
  4. Pour melted coconut oil into mixture and combine mixing.
  5. Add fruit of your choice gently into the mixture.
  6. Pour the mixture evenly into 14 muffin cups. Bake about 35 minutes.
Recipe Notes

**I like it with 1 tsp peanut butter and a fresh strawberry star on top. Plus drizzling a bit honey on baked muffins won’t kill anyone 🙂

Approximate macros per muffin (without fruit): 132 calories, 6 g protein, 18 g carbs, 4 g fat.
