Who doesn't love an easy Meal Prep!?! How about a simple Avocado Salad that is great for breakfast, lunch or snack!
Ingredients:
1 medium avocado, pitted and peeled
2 tbs Greek yogurt (or mayo)
½ teaspoon fresh lemon juice
4 hard boiled eggs, peeled and chopped
1 medium length celery stalk, chopped
1 tbs chopped chives
Salt & pepper, to taste
Method:
1) mash together avocado and lemon juice
2) Stir in remaining ingredients
3) season with salt and pepper, as desired
4) prep with your favorite crackers on the side, in a pita pocket, over brown rice or enjoy plain for a low carb/high protein prep!
