This cilantro lime rice just became our new favorite meal prep staple. Just choose your favorite protein to combine it with and enjoy throughout the week!
We love cilantro, but we know some people don't. For some folks, it tastes like soap. You likely know how people feel about cilantro in your household. By now, let's hope you're still with us. Regardless, this is one of the most versatile and healthy meal prep recipes you can make.
We love making this for the week and keeping it on hand for all different kinds of meals. It keeps well for several days in airtight meal prep containers. You can also freeze cilantro lime rice ahead of time and then just pop it frozen right into the pan, with a little bit of water or oil.
Cilantro Lime Rice Ingredients
- 1 cup rice, any kind
- ⅓ cup cilantro, chopped
- ½ onion
- 1 teaspoon red pepper, or to taste
- 1 teaspoon salt
- 2 cups veggie or chicken stock
How to Serve Cilantro Lime Rice
We love this on its own, with a fried egg on top, or alongside chicken or pork. Try it with shrimp or salmon and keep some extra lime wedges handy for serving. Try it with any Mexican dish, such as enchiladas or fajitas, or alongside a great Asian stir fry dish. Curry dishes love cilantro rice, too.
Substitutions and Alterations
- Make this with any kind of rice you like, whether it's brown, white, jasmine, or basmati.
- Swap the veggie broth for chicken broth; we like either here.
- Skip the red pepper altogether if you don't want heat.
- Use green onions or a red onion instead of white or yellow. It's up to you!
- Try parsley instead and lemon for a different flavor profile.

Ingredients
- 1 cup rice
- ⅓ cup cilantro
- 1 teaspoon red pepper
- 1 lime
- ½ onion white or red
- 2 cups vegetable or chicken broth
Instructions
- Rinse the rice in a fine-mesh sieve over the sink until it runs clear.
- Dice the onion and mince the garlic cloves. Heat a wide, deep skillet over medium heat and add the olive oil. When it's hot cook the onions and garlic and add the salt and red pepper.
- Stir in the rice and broth in the skillet. Bring the rice to a boil, then turn it down to a simmer and cover. Cook over medium-low heat until the water is absorbed and the rice is tender.
- Stir thoroughly and remove from the heat.
- Chop up the cilantro and mix into the rice. Squeeze the rice with lime juice and stir. Transfer to meal prep containers, or use immediately.
