This meal prep will keep for 4 to 5 days in the fridge, as long as it's in a sealed container. We don't recommend freezing chicken salad. Mayo just doesn't freeze well.

Or if you don't want soggy bread and you're taking this with you for lunch, serve it with crackers. It's also great spread on toasted bread or stuffed inside a whole wheat pita. Substitutions and Variations
We love walnuts and cilantro, but you can also use almonds or pecans. Pistachios are a nice twist. Parsley works well with any of those nuts if you don't like cilantro or someone in your family doesn't. We get it—it can be a polarizing herb!
