There's nothing quite as versatile as a rotisserie chicken. We love using one for this healthy meal prep recipe, but any leftover chicken you have on hand works great in chicken salad. (Or, heck, turkey for that matter!)It's a great healthy meal prep recipe that works well for lunches during the week.
The ingredients are ones you may have on hand, in the form of the nuts, mustard, and mayo. Don't skip the nuts; they add a lot of crunch and even more protein to make this chicken salad extra nutritious.
Chicken Salad Ingredients
- 1 pound shredded chicken
- 1 celery stalk, diced
- ½ red onion, diced
- ⅓ cup walnuts
- ¼ cup cilantro
- ⅓ cup mayo
- ¼ cup Dijon mustard

How to Store Chicken Salad
This meal prep will keep for 4 to 5 days in the fridge, as long as it's in a sealed container. We don't recommend freezing chicken salad. Mayo just doesn't freeze well.
How to Serve
There's nothing better than a good chicken salad sandwich, maybe on toasted wheat or multigrain bread. Or if you don't want soggy bread and you're taking this with you for lunch, serve it with crackers. It's also great spread on toasted bread or stuffed inside a whole wheat pita. Or feel free to eat it as is, because it's just that good.
Substitutions and Variations
We love walnuts and cilantro, but you can also use almonds or pecans. Pistachios are a nice twist. Parsley works well with any of those nuts if you don't like cilantro or someone in your family doesn't. We get it—it can be a polarizing herb!

Ingredients
- 1 lb Shredded Chicken
- 1 Celery
- ½ Red onion
- ⅓ cup Walnuts
- ¼ cup Cilantro
- ⅓ cup Mayo
- ¼ cup Dijon Mustard
Instructions
- Chop up the celery, walnuts, red onion and cilantro and add to a large bowl with the shredded chicken.
- Then add ⅓ cup of primal kitchen mayo and ¼ cup of dijon mustard.
- Mix everything together and add to your meal prep containers.
- Add in your favorite crackers or chips and enjoy throughout the week!
