SOBA NOODLE BOWL

16 oz. chicken breast

Himalayan sea salt

Black pepper

1 8 oz. package Soba Noodles

2 carrots, jullienned

1 cup purple cabbage, shredded

½ cup cilantro, roughly chopped

PEANUT SAUCE

2 TBS Peanut Butter

2 TBS Tamari lite

1 TBS lime juice

1 TBS Rice Vinegar

¼ cup filtered water

For Serving:

Black and white sesame seeds

Instructions
  1. Preheat oven to 400 and line a baking sheet with aluminum foil. Add chicken breast the baking sheet and spray with a bit of avocado oil and lightly season with salt and pepper. Bake for 20 minutes, then slice into strips and refrigerate until ready for use.
  2. To make the soba noodles, prepare noodles according to package instructions, careful not to overcook. Drain and rinse cooked noodles, then add to a bowl with shredded carrot, purple cabbage, and cilantro.
  3. Prepare peanut sauce by whisking all ingredients together in a small bowl. Pour the sauce over the noodle and vegetable mixture, then stir to combine.
