If there's one meal I find myself making over and over again, it's this Creamy Sweet Potato and Sausage Pasta. It's packed with bold flavors from the sausage, a little sweetness from the roasted sweetpotatoes, and a rich, creamy sauce that makes every bite feel indulgent-without being too heavy.

I first started making this recipe when I was looking for a meal prep option that had plenty of protein, fiber, and flavor but didn't require me to stand over the stove forever.

Roasting everything on a sheet pan while the pasta cooks keeps the process simple, and the goat cheese melts into a perfect, creamy sauce with no extra effort.

This is the kind of recipe that doesn't get boring, which is crucial when you're eating the same meal a few times in a week.

I love how the sweetpotatoes caramelize in the oven, the chicken sausage adds some spice, and the Parmesan brings it all together. Plus, it reheats like a dream, making it perfect for meal prep.

Ingredients

  • 1 pound sweet potatoes, peeled and diced into ½-inch cubes
  • 1 yellow onion, diced into ½-inch cubes
  • 2 to 4 garlic cloves, minced
  • 12 ounces chicken sausage, sliced into coins
  • 2 teaspoons Italian seasoning
  • 3 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 1.5 cups bowtie pasta (12 ounces)
  • 6 ounces goat cheese (from a log, not crumbles)
  • ⅓ cup finely grated Parmesan cheese
  • 2 cups baby spinach, coarsely chopped
  • 1 cup fresh basil, ribboned (optional)

How to Make Sweet potato and Sausage Pasta

Step 1: Roast the Vegetables

  • Preheat the oven to 425°F and line a sheet pan with parchment paper or drizzle with olive oil.
  • Toss the sweet potatoes, onions, and garlic onto the sheet pan and mix it with, Italian seasoning, salt, and pepper.
  • Spread evenly on the sheet pan and roast for 15 minutes.
  • After 15 minutes, remove the sheet pan from the oven and add the sliced chicken sausage, toss everything together, and roast for another 10-15 minutes, until the sweet potatoes are fork-tender.

Step 2: Cook the Pasta

  • While the veggies roast, bring a large pot of salted water to a boil.
  • Cook the bowtie pasta 1 minute less than package instructions for a perfect al dente texture.
  • Reserve 1 cup of pasta water before draining.

Step 3: Make the Sauce & Combine

  • In the same pot, add the drained pasta and spoon the goat cheese over it.
  • Slowly add pasta water, ¼ cup at a time, stirring until the cheese melts into a creamy sauce.
  • Once the pasta and goat cheese mix has cooled, in a large bowl, toss in the roasted sweet potatoes, onions, and sausage.
  • Stir in the Parmesan cheese, baby spinach, and fresh basil. The heat from the pasta will wilt the spinach perfectly.
  • Adjust seasoning to taste and serve warm!

How to Store & Reheat Sweet potato and Sausage Pasta

Store:

  • Divide into airtight meal prep containers and refrigerate for up to 4 days.

Reheat:

  • Microwave for 1-2 minutes, stirring halfway through. Add a splash of water or broth if needed to loosen up the sauce.
  • You can also reheat on the stovetop over medium heat with a splash of water for a fresher taste.
