While these Pretzel Bites aren’t the best for refrigeration, they definitely can be frozen and last for up to one month. We suggest wrapping them up in plastic wrap and then putting them into freezer bags to keep them all together.
For Pretzel Bites
For Cheese Sauce
Begin making the Pretzel bites by preheating your oven to 450°F and lining a medium-size baking tray with parchment paper. While you wait, add your yeast, warm milk, and sugar to a mixer, making sure you mix the ingredients together with a paddle attachment. Let the mixture cool for 10 minutes, and then mix in your favorite gluten-free flour and sea salt on low speed for 3 minutes. Now you’ve got your dough!
Up next, fill a large pot with water halfway and bring to a boil over medium-high heat. Divide your dough into 4 equal pieces, and roll each piece into 10-inch strands. Slice each strand into 8-10 smaller bite-sized pieces, and set them aside.
Once your pot of water is at a rolling boil, slowly mix in baking soda, and drop each pretzel bite into the water, making sure you time each one for 20 seconds. Remove using a slotted spoon and place onto a paper towel-lined tray to dry.
Now it’s time to prepare the boiled bites for baking! Arrange the bites onto your baking sheet, brush each one with egg white mixture, and sprinkle with coarse sea salt. Bake for 9-10 minutes until golden brown, then allow to cool for 5 minutes.
As your pretzel bites bake, make the cheese dipping sauce. Heat milk and butter over medium heat for about 5 minutes. Whisk in cheese, mustard, and sea salt until the cheese is melted. Then whisk in gluten-free flour and let the sauce thicken a bit.
Once the cheese sauce is finished, your pretzel bites should be finished and cooling. That’s it! A delicious savory snack in under 30 minutes!
This recipe makes 6 servings, which contain 6 pretzel bites and 1 cup of cheddar cheese dipping sauce each—So we recommend using a dual-compartment meal prep container like the ones you can find right here!
