Instant Pot Beef BBQ Ribs

Instant Pot Beef BBQ Ribs Ingredients: 

Ribs:

  • 1 Rack Beef Back Ribs (~2 lbs.)
  • 1 C. Smokey + Sweet BBQ Sauce (aka Memphis-syle)
  • 1/2 C. Apple Cider Vinegar
  • 1/2 C. Beef Broth
  • 1/4 C. BBQ Dry Rub Seasoning Blend
  • 1 Tbsp. Coconut Palm Sugar
  • 2 Tbsp. Avocado Oil
  • 2 cups Arugula

Coleslaw:

  • 1Bag of Coleslaw Veggie Mix (without dressing)
  • 1/4 C. Mayo
  • 1/4 C. Sour Cream (or plain greek yogurt)
  • 1/4 C. Apple Cider Vinegar
  • 1.5 Tbsp. Honey (or pure maple syrup)
  • 1/2 tsp. Himalayan Pink Salt
  • 1/4 tsp. Ground Black Pepper

Garlic Cauli Mash:

  • 3 C. Cauliflower Florets (~medium head of cauliflower)
  • 1/2 C. Non-Fat Greek Yogurt 
  • 2 Tbsp. Avocado Oil or Olive Oil
  • 1 Garlic Clove
  • 1/2 tsp. Garlic Powder
  • 6 Tbsp. Butter (for serving), optional

Ingredients

Ribs:

  • 1 rack Beef Ribs ~2 lbs.
  • 1 cup Smokey + Sweet BBQ Sauce aka Memphis-syle

  • 1/2 cup Beef Broth
  • 1/4 cup BBQ Dry Rub Seasoning Blend

Coleslaw:

  • 4 cups Coleslaw Veggie Mix without dressing
  • 1/4 cup Mayo
  • 1/4 cup Sour Cream or plain greek yogurt
  • 1/4 cup Apple Cider Vinegar
  • 1.5 Tbsp. Honey or pure maple syrup
  • 1/2 tsp. Himalayan Pink Salt
  • 1/4 tsp. Ground Black Pepper

  • 2 Tbsp. Avocado Oil or Olive Oil

Instructions

  • Prepare ribs by removing back membrane, then lightly coat with oil on all sides. Line a sheet pan with parchment paper, set aside.
  • Next, pat on coconut sugar and bbq dry rub on all sides. Add apple cider vinegar and beef broth to Instant Pot place a trivet in the pot so the ribs aren’t sitting in the liquid.
  • Place ribs in IP, curving ribs in a “C” to fit in the pot — cover and set lid to sealing. Select Manual Mode (high pressurfor ~20-30 minutes (depending on how large/how many ribs are being prepared).
  • While the ribs are cooking, prepare sides:
  • Combine all coleslaw ingredients into a large mixing bowl and stir until well incorpo-rated and completely coated in the dressing. Place in fridge until ready to enjoy.
  • Steam cauliflower until for tender, slightly firm and place into a blender or food pro-cessor with the remaining cauliflower mash ingredients. Blend/process until resem-bles mashed potato consistency, but not as far as a puree’s consistency. Once ready to enjoy, serve with a pat of butter.
  • Once ribs have finished, quick release the steam and place ribs onto parchment lined sheet pan.
  • Pour BBQ sauce over all sides, then place sheet pan on upper rack and broil for ~10 minutes, or until bbq sauce has caramelized a little bit.
  • Serve with sides, store, and enjoy!
