Equipment

  • 1 slow cooker

Ingredients

  • 1 lb. lean ground beef
  • ½ cup uncooked brown rice

Instructions

  • Brown ground beef in a medium pan until mostly cooked through, about 8 minutes. Add cooked ground beef to crockpot. Add remaining ingredients except salt, pepper and parsley.
  • Cover and cook on low for 8 hours or on high for 4 hours. Season with salt and pepper to taste.
  • Ladle soup into 4 round meal prepcontainers and top with chopped parsley.
