Yes! You can freeze Paleo Cran-Blackberry Overnight French Toast for 1-2 months. To reheat, remove the lid from your meal prep container, and pop in the microwave for 1 minute, repeat in 20-30 second increments until heated to your liking. But, it is also delicious cold, so you can remove it from the freezer the night before and let it thaw in the fridge and in the morning, simply top with your favorite syrup, or whipped cream and more fresh fruit if desired.
This a simple, yet delicious recipe that we know your family will love. The process is pretty simple. Line a baking sheet with parchment or foil. Whisk together eggs, egg whites, milk, vanilla and collagen in a bowl. Dice up 4 paleo buns and toss in the egg mixture and stir to coat. Add in berries and mix together. Pour mixture into prepared pan and cover with foil or plastic wrap and place in the fridge overnight.
In the morning, or whenever you are ready to bake, preheat the oven to 350 and remove the dish from the fridge, take off the foil or plastic wrap, and bake in the oven for 30-40 minutes or until slightly golden brown. Remove from the oven and allow it to cool completely before placing in meal prep containers and storing it in the fridge or freezer.
This recipe makes 6 servings. After the dish is completely cooled, portion the Paleo Cran-Blackberry Overnight French toast into 6 Meal Prep Containers and place in the fridge for 2-3 days or freeze for 1-2 months.
