Keto Lamb Meatball Meal Prep Ingredients:

  • 1 lb ground lamb
  • 2 eggs, beaten
  • 4 garlic cloves
  • 3 TBSP Grated white onion
  • 1 tsp salt (Pink Himalayan is preferred)
  • 1/2 tsp Black Pepper
  • 1/2 tsp Fresh Rosemary
  • 1/2 tsp Fresh Parsley
  • 1/2 tsp Fresh Oregano
  • 1 tsp Lemon Zest
  • 1 tsp Crushed Red Pepper
  • 2 cups Marinara Sauce (or your desired amount)

Keto Lamb Meatball Meal Prep

Ingredients

  • 1 pound ground lamb
  • 2 large eggs beaten
  • 4 cloves garlic
  • 3 tbs grated white onion
  • 1 tsp Salt
  • 1/4 tsp black pepper
  • 1/2 tsp fresh rosemary
  • 1/2 tsp fresh oregano
  • 1/2 tsp fresh parsley
  • 1 tsp lemon zest
  • 1 tsp Crushed Red Pepper
  • 2 cups whole30 compliant marinara sauce

Optional

  • zoodles
  • Brown Rice
  • shredded cheese

Instructions

  • Combine all ingredients (except the sauce) by hand or in a stand-up mixer with the paddle attachment.
  • Form mixture into meatballs of 1-1.5 oz.
  • Cook in batches in a saute pan with olive oil, being careful not to crowd the pan.
  • Cook until 150 - 160 degrees.
  • Serve with your favorite marinara sauce and garnish with fresh basil.

Oven Method

  • Follow steps 1 and 2 above.
  • On your sheet pan, place parchment paper.
  • Put the meatballs on your pan (space them at least 2 inches apart), and bake at 400 degrees.
  • Cook until 150 - 160 degrees. (check it after 15 mins)
  • Serve with your favorite marinara sauce and garnish with fresh basil.

The meatballs can be cooled and stored in an airtight container, and placed in the fridge for up to a week. Or, they can be frozen for up to a month.
