AIP-Friendly Breakfast Hash

This well-rounded breakfast ditches eggs in favor of herb-seasoned sausage, vegetables, and a side of seasonal fruit for an AIP Friendly breakfast that satisfies. Ground pork can be substituted with ground turkey, chicken, or beef. 

AIP-Friendly Breakfast Hash Ingredients:

  • 2 tablespoon olive oil
  • 3 cups peeled/diced sweet potatoes
  • 1 lb. brussels sprouts, halved
  • 2 cups chopped kale
  • 1 lb. ground pork
  • 1 tablespoon Paleo Powder AIP Seasoning

For Serving 

  • 2 cups fresh cherries
  • 2 cups diced pineapple

Ingredients

  • 2 tablespoon olive oil
  • 3 cups peeled/diced sweet potatoes
  • 1 lb. brussels sprouts halved
  • 2 cups chopped kale
  • 1 lb. ground pork
  • 1 tablespoon Paleo Powder AIP Seasoning

For Serving

  • 2 cups fresh cherries
  • 2 cups diced pineapple

Instructions

  • Heat olive oil over medium-high heat in a large heavy pan or Dutch oven. Add sweet potatoes and Brussels sprouts and sauté for 10 minutes covered, stirring occasionally.
  • Move sweet potatoes and Brussels sprouts to one side and add pork to the pan. Use a spatula to break pork up into small pieces. Brown for 5 minutes. Sprinkle Paleo Powder Seasoning over pork and vegetables and stir well. Cook 7-10 minutes longer, uncovered until pork is cooked through and sweet potatoes are tender. Stir in kale and cook for 2 minutes to wilt.
  • Divide hash between large compartments of 4 MPOF teal containers and add cherries and pineapple to the small compartments. Refrigerate until serving.
