Vegan Snickers Protein Bars Ingredients:
For Nougat Layer
1 cup gluten-free flour (or regular flour)
⅓ cup unsweetened vanilla vegan protein powder (garden of life brand)
2 tablespoon agave nectar (or sweetener of choice)
⅓ cup unsweetened almond milk (or milk of choice)
2 tablespoon melted coconut oil
For Filling
¼ cup pitted dates, soaked in ¼ cup hot water for 5 minutes
⅓ cup natural drippy unsweetened peanut butter, at room temperature (can sub for any drippy nut or seed butter)
2 tablespoon roasted salted peanuts, coarsely chopped (can swap for any nut)
For Chocolate Drizzle
¼ cup unsweetened vegan dark chocolate chips (or chocolate of choice)

Instructions
Line a loaf pan with parchment paper overlapping sides. Combine flour, protein powder, coconut oil, agave nectar and almond milk in a small bowl and mix thoroughly to moisten. Spread mixture in the bottom of the prepared pan and press with damp fingertips to form the pan. Freeze for 30 minutes.
Combine dates with water from soaking and peanut butter in a food processor and blend until smooth. Spread filling over the nougat layer and sprinkle with chopped peanuts. Freeze an additional 30 minutes.
Melt chocolate chips over a double boiler. Lift bars from loaf pan and slice into 6 equal pieces. Drizzle chocolate over the top of each bar. Place on a wax paper line tray or plate and freeze for 10 minutes to firm.
Divide sliced strawberries between 6 (½ cup) compartments of snack containers. Add 1 snickers bar to each remaining compartment.
