Vegan Snickers Protein Bars

Ingredients

For Nougat Layer

  • 1 cup gluten-free flour or flour of choice
  • cup unsweetened vanilla vegan protein powder garden of life brand (or any vegan brand)
  • 2 tablespoon agave nectar can sub with any liquid sweetener
  • cup unsweetened almond milk can sub with any kind of milk
  • 2 tablespoon melted coconut oil

For Filling

  • ¼ cup pitted dates soaked in ¼ cup hot water for 5 minutes
  • cup natural drippy unsweetened peanut butter, at room temperature can use any drippy nut or seed butter
  • 2 tablespoon roasted salted peanuts coarsely chopped (can use any nut)

For Chocolate Drizzle

  • ¼ cup unsweetened vegan dark chocolate chips use any kind of chocolate

For Serving

  • 2 cups sliced strawberries swap for any fruit

Instructions

  • Line a loaf pan with parchment paper overlapping sides. Combine flour, protein powder, coconut oil, agave nectar and almond milk in a small bowl and mix thoroughly to moisten. Spread mixture in the bottom of the prepared pan and press with damp fingertips to form the pan. Freeze for 30 minutes.
  • Combine dates with water from soaking and peanut butter in a food processor and blend until smooth. Spread filling over the nougat layer and sprinkle with chopped peanuts. Freeze an additional 30 minutes.
  • Melt chocolate chips over a double boiler. Lift bars from loaf pan and slice into 6 equal pieces. Drizzle chocolate over the top of each bar. Place on a wax paper line tray or plate and freeze for 10 minutes to firm.
  • Divide sliced strawberries between 6 (½ cup) compartments of snack containers. Add 1 snickers bar to each remaining compartment.
