Adding figs to this delicious Chicken, Fig, Cranberry & Goat Cheese Salad is a healthy and sweet way to enjoy lunch!

Ingredients
8oz goat cheese
1 lb cooked chicken breast, sliced
For the Dressing:
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon maple syrup
¼ tsp. salt
¼ tsp. black pepper
For the Salad:
8 cups mixed greens
1 tablespoon mint leaves, torn
1 tablespoon basil leaves, torn
8 fresh figs, halved
½ cup cranberries
¼ cup salted almonds
Instructions
Make the dressing. Whisk all of the ingredients together and set aside.
Assemble the salads. Divide evenly between 4 meal prep containers Then top each salad with goat cheese, chicken 4 fig halves, ¼ cranberries and 1 tablespoon almonds. Put dressing in a container on the side.
