They're a special kind of bell pepper that makes for an intensely flavorful stuffed pepper experience. They look like a combination of red, yellow, and orange peppers, but they're striped. This natural variation hails from the Netherlands—in case you're wondering. How cool is nature?
This stuffed bell pepper recipe is really as easy as it is delicious! In just 45 minutes, you could have dinner for four on the table and look like a boss! Or, of course, you can meal prep the heck out of this, and have lunch and/or dinner ready for you.
Classic Southwestern flavors make this unique bell pepper a favorite, healthy dinner. While it looks like a lot of ingredients, this is almost as simple as it gets. And here's the best part: All the ingredients for stuffing cook in one pan. Then, you just transfer it over to a baking dish to finish it off.
If you can't find these special peppers, we recommend using a combination of red, yellow, and orange bell peppers instead for stuffing. They'll most closely approximate the flavor of the Enjoya peppers.
Also, you can use brown rice if you like, instead of white rice.
Another option? You can use ground turkey, chicken, or pork, or a combination of any of those. As you'll notice, this recipe combines sausage and beef. Regardless of what you choose, these stuffed bell peppers are delicious.
Seasoning the ground beef is an option if you like. You can reinforce the flavors in the sausage. For example, you can add a little fennel seed, oregano, basil, or parsley, depending on your preferences.
You can make these all at once and keep them meal-prepped for up to four or five days. Or, feel free to serve it for dinner. A nice green salad would go well with this dish, with a Greek or balsamic viniagrette.
In the event of leftovers, you can freeze them. Once they've cooled, wrap them in foil. Then, when it's time to reheat, you can pop these stuffed bell peppers in the oven—just like that.
