Sheet Pan Pineapple Chicken

Ingredients

  • 4 Chicken Breasts boneless + skinless
  • 4 Pineapple Rings
  • 2 cups Broccoli Florets steamed (or can be roasted alongside the chicken)
  • 2 cups Cauliflower Florets steamed (or can be roasted alongside the chicken)
  • 2 cups Long Grain White Rice steamed
  • ¼ cup Mozzarella Cheese shredded
  • 3 Tbsp. Avocado Oil
  • 2 Tbsp. Grated Parmesan
  • 1 tsp. Hungarian Paprika
  • 1 tsp. Garlic Granules or powder
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Basil
  • ½ tsp. Himalayan Pink Salt
  • ¼ tsp. Ground Black Pepper

Instructions

  • Preheat oven to 375℉ and line a large sheet pan with parchment paper, set aside.
  • Season chicken with oil, herbs, and spices — place onto the sheet pan.
  • Bake on the middle oven rack for 10-20 minutes then add half the amount of both kinds of cheese, a pineapple ring, and the remaining amount of cheese. (i.e. layer: cheese, pineapple, cheese)
  • Place on the top rack and continue to cook until cheese has melted and chicken is fully cooked, ~10-15 more minutes (depending on the size of chicken breast or until chicken has reached an internal temperature of 165℉.
  • Serve; store and enjoy!
