Instructions
In a large skillet with extra virgin olive oil, combine the turkey, salt, pepper, oregano, and garlic over medium heat. Breakup the meat with a wooden spoon while it browns, about 5 minutes.
Add the chicken broth and lemon juice and turn down the temperature to low and let it all simmer for 2 to 3 minutes.
Add the black olives, chopped sundried tomatoes, and parsley. Stir to combine and cook another 5 minutes.
Divide the meat mixture into 4 meal prep containers paired with brown rice, cucumber slices, and lemons.
