These crispy and delicious zucchini chips are made using a simple and straightforward process that involves thinly slicing zucchini and cooking it in an air fryer.
Add flour to a small bowl, beat eggs in a second small bowl, and combine breadcrumbs, Parmesan cheese, Italian seasoning and salt in a third bowl.
Working in 2 batches, dip each slice of zucchini in flour followed by egg mixture allowing excess to run back into bowl. Coat in breadcrumb mixture and place in air fryer leaving a small amount of space between each zucchini slice.
Air fry at 400ºF for 8-9 minutes. Repeat with remaining zucchini.
Divide zucchini chips among 4 compartments of 4 MPOF snack containers. Divide ranch dressing among remaining 4 compartments.
