Rinse the rice in a fine-mesh sieve over the sink until it runs clear.
Dice the onion and mince the garlic cloves. Heat a wide, deep skillet over medium heat and add the olive oil. When it's hot cook the onions and garlic and add the salt and red pepper.
Stir in the rice and broth in the skillet. Bring the rice to a boil, then turn it down to a simmer and cover. Cook over medium-low heat until the water is absorbed and the rice is tender.
Stir thoroughly and remove from the heat.
Chop up the cilantro and mix into the rice. Squeeze the rice with lime juice and stir. Transfer to meal prep containers, or use immediately.
