The slow cooker does the work in this high-protein beef and cabbage soup. Full of vegetables and fiber-rich brown rice, this soup is a complete meal with plenty of servings for easy reheating on busy days!
Brown ground beef in a medium pan until mostly cooked through, about 8 minutes. Add cooked ground beef to crockpot. Add remaining ingredients except salt, pepper and parsley.
Cover and cook on low for 8 hours or on high for 4 hours. Season with salt and pepper to taste.
Ladle soup into 4 round meal prepcontainers and top with chopped parsley.
