Rinse and dry potatoes and add to a medium mixing bowl. Drizzle with olive oil and using your hands, rub the olive oil into the skins as evenly as possible. Sprinkle with sea salt and pepper.
Add potatoes to the basket of the air fryer. Fry at 350ºF for 20 minutes, shaking the basket after 10 minutes for even frying. Cool potatoes for 2 to 3 minutes before serving.
