One Skillet Spaghetti Squash & Meatballs

Ingredients

  • 1 large spaghetti squash baked and skin removed
  • ½ cup eggwhites
  • 1 cup pasta sauce
  • 1 recipe 20 Minute Meatballs *see link above
  • 1 cup Shredded Mozzarella Cheese

Instructions

  • Preheat oven to 400 degrees F
  • Mix together spaghetti squash, eggs, ¾ cup pasta sauce and ½ cup cheese. Place into a cast iron skillet and baked 20 minutes.
  • Remove from the oven and top with remaining sauce, meatballs and cheese. Return to the oven and bake for an additional 15-18 minutes or until meatballs are cooked. Allow to cool slightly before serving.
