Spaghetti Squash Shrimp Scampi
Everyone’s favorite shrimp scampi with a low-carb, healthier alternative to pasta using spaghetti squash! It’s still amazingly buttery and garlicky with half the calories!

1 Spaghetti Squash 1 lb shrimp 1 Cup Mushrooms 1 Jar Artichokes 1 Bag Spinach 6 Whole Garlic Cloves 1 Can Diced Tomatoes
Preheat the oven to 450° and place foil on a cookie sheet.
Slice the spaghetti squash in half, scoop the inside seeds out and cover with olive oil, salt, pepper and garlic cloves.
Bake for 35-40 minutes.
In a separate pan, saute the garlic cloves in olive oil then place in the sliced mushrooms.
Cook on medium for 5-7 minutes then add in the artichokes, spinach and shrimp. Cook until the shrimp turn pink.
Using a fork, scrape the inside of the spaghetti squash.
Distribute evenly into four meal prep containers, then top with the shrimp and veggies.
