Ingredients

  • 1 box pancake mix we used Simple Mills brand
  • 5 large eggs
  • 1/3 cup Water or milk
  • 3 tbsp oil
  • 1/3 cup dairy-free chocolate chips

Instructions

  • Preheat oven to 350 degrees F
  • Whisk together eggs, water and oil
  • Add in pancake mix and 1/2 chocolate chips
  • Evenly divide batter better muffin cups
  • Top with remaining chocolate chips
  • Bake for 9-15 minutes or until a toothpick comes out clean
  • Meal Prep with fresh fruit
