Ingredients
1lb.93 % lean ground beef
1tablespoonpure maple syrup
1tablespoonPaleo Powder AIP seasoning
⅛teaspoonblack pepper
For Serving
4cupscubed white sweet potatoes
2tablespoonolive oil
½teaspoonsea salt
¼teaspoongarlic powder
2kiwipeeled and chopped
1cupraspberries
1cupblueberries
4cupsbaby spinachoptional
Instructions
Combine potatoes, olive oil, sea salt, and garlic powder in a medium mixing bowl and stir to coat. Heat a medium skillet over medium heat and add potatoes. Cook for 10 minutes, stirring occasionally for even browning. Cover and continue to cook 10 minutes longer. Divide potatoes among 4 (1 cup) compartments of white MPOF containers.
In a medium mixing bowl, thoroughly stir together the ingredients for breakfast sausage. Form into 8 thin round patties, flattening them gently.
Heat a medium skillet over medium heat and spray with cooking oil. Add 4 patties at a time (don't crowd the pan, or they'll take too long to cook). Cook for 4 minutes on each side. Transfer cooked patties to a paper towel-lined plate to drain. Repeat with remaining patties.
Divide spinach among 4 large compartments of containers and top with 2 breakfast sausage patties. Divide fruit among remaining (1 cup) compartments.
