Grilled Steak and Corn Salad with Hot Honey Lime Dressing

- 1½ lbs flank steak
- 2 cups corn
- 1 English cucumber
- 1 jalapeño
- 1 large avocado
- ½ cup cilantro
- 4 green onions
- 1 tablespoon oil on the steak
- Salt
- Pepper
Dressing
- 3 tablespoon lime juice
- 2 tablespoon hot honey
- 1 tablespoon olive oil
Get Recipe Ingredients
Preheat the grill to medium-high heat, about 425–450°F.
Season the steak with olive oil, salt, and pepper. Grill to your preferred doneness, flipping once. Remove from the grill and rest for 5–10 minutes.
Grill the corn for 8–10 minutes, turning occasionally, until tender and lightly charred. Let cool, then cut the kernels from the cob.
Prep the salad by chopping the cucumber, jalapeño, avocado, cilantro, and green onions.
Make the dressing by whisking together lime juice, hot honey, olive oil, salt, and pepper.
Slice the steak thinly against the grain.
Assemble the salad by combining the corn, cucumber, jalapeño, cilantro, and green onions. Toss with the dressing, then gently fold in the avocado.
Top with steak and finish with extra lime, cilantro, or hot honey, if desired.
