For Greens
4cupschopped chardkale, or collard greens
2tablespoonolive oil
¼teaspoonsea salt
Cracked black pepper to taste
Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add kale and sauté for 5-6 minutes stirring regularly. Season with salt and pepper. Divide sautéed kale between small compartments of 4 teal MPOF containers.
Remove any pieces of kale left in pan with tongs and turn heat off. Leave leftover oil from sautéing kale in pan.
Combine ingredients for chicken patties in a medium mixing bowl and mix thoroughly with clean hands to combine.
Heat skillet over medium-high heat for 1 minute. Add 4 scoops of chicken mixture to hot skillet using a ¼ cup measuring cup and press with a spatula to form patties. Cook for 5 minutes on each side.
Transfer cooked patties to a plate. Add a tablespoon of oil to pan and repeat with remaining chicken mixture to make 8 patties.
Place 2 chicken patties in large compartments of teal containers and add a small cup of sauce next to chicken patties.
