Keto Parmesan Chicken Patties

These Keto cheesy patties are a low carb way to satisfy your craving for chicken parmesan, complete with a marinara sauce for dipping!

Ingredients

  • 1 lb. ground chicken
  • cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon olive oil for cooking
  • ½ cup no added sugar marinara or pasta sauce Rao’s Homemade Marinara

For Greens

  • 4 cups chopped chard kale, or collard greens
  • 2 tablespoon olive oil
  • ¼ teaspoon sea salt
  • Cracked black pepper to taste

Instructions

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add kale and sauté for 5-6 minutes stirring regularly. Season with salt and pepper. Divide sautéed kale between small compartments of 4 teal MPOF containers.  
  • Remove any pieces of kale left in pan with tongs and turn heat off. Leave leftover oil from sautéing kale in pan.  
  • Combine ingredients for chicken patties in a medium mixing bowl and mix thoroughly with clean hands to combine.  
  • Heat skillet over medium-high heat for 1 minute. Add 4 scoops of chicken mixture to hot skillet using a ¼ cup measuring cup and press with a spatula to form patties. Cook for 5 minutes on each side.  
  • Transfer cooked patties to a plate. Add a tablespoon of oil to pan and repeat with remaining chicken mixture to make 8 patties.
  • Place 2 chicken patties in large compartments of teal containers and add a small cup of sauce next to chicken patties.
