Sausage and Egg Breakfast Bake

All the best of breakfast is packed into this protein-rich casserole. Herbed breakfast sausage, veggies, and cheddar cheese add plenty of flavor without the need for lots of ingredients.

Ingredients

  • 8 large eggs
  • ½ cup 2% milk
  • 1 ½ cups shredded cheddar cheese
  • 12 oz. pork breakfast sausage gluten free, if necessary
  • ½ cup chopped red bell pepper
  • ½ cup chopped parsley
  • cup chopped green onion
  • ½ teaspoon sea salt
  • ¼ teaspoon cracked black pepper

For Serving

  • 5 cups mixed berries strawberries, blueberries etc.

Instructions

  • Preheat oven to 350ºF and lightly grease an 8x11 oven-safe casserole dish or baking pan with cooking spray. Heat breakfast sausage over medium heat in a skillet and use a spatula to break up into small pieces. Brown for 5 minutes stirring occasionally. Add bell pepper and green onion and cook 3 minutes longer. It’s okay if the sausage isn’t cooked completely. Drain grease from the pan. Set pan aside to cool sausage or 5 minutes.
  • Whisk eggs, milk, sea salt, and black pepper together in a medium mixing bowl. Stir in ½ cup of shredded cheese and sausage/vegetable mixture. Pour into pan and sprinkle with remaining cheese. Bake for 35-40 minutes or until the center is cooked. Cool at room temperature for 10 minutes before slicing into 6 servings.
  • Place 1 piece of egg bake in a large compartment of 6 teal MPOF containers. Add berries to 6 smaller compartments.
