Ditch takeout and make this tangy, umami pork fried cauliflower rice instead. This version is low in carbs, gluten-free and soy-free for a guilt-free takeout fake-out.
Heat 1 tablespoon of toasted sesame oil in a large heavy pan over medium heat. Add onion, carrots, and peas and cook for 8 minutes until onions are softened, stirring occasionally. Stir in garlic and ginger and cook for 2 minutes longer. Transfer to a medium bowl.
While vegetables cook, chop pork into ½ inch pieces. Increase heat to medium-high. Add another tablespoon of sesame oil to the pan and diced pork. Brown pork for 7-8 minutes, stirring occasionally. Transfer pork to bowl with vegetables.
Add beaten eggs to the pan and cook 4 minutes stirring regularly. Transfer to bowl with pork and vegetables.
Add remaining oil to the pan. Add cauliflower rice, pork, vegetables, and eggs. Pour coconut aminos over mixture and stir well. Cook for 5 minutes. Divide rice between 4 MPOF black containers and garnish with green onion.
