Cauliflower Pork Fried Rice

Ditch takeout and make this tangy, umami pork fried cauliflower rice instead. This version is low in carbs, gluten-free and soy-free for a guilt-free takeout fake-out.

Ingredients

  • 3 tablespoon toasted sesame oil divided
  • 1 lb. boneless pork chops
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • ½ cup chopped sweet white onion
  • ½ cup chopped carrots
  • ½ cup frozen green peas
  • 2 large eggs beaten
  • 5 cups cilantro lime cauliflower rice
  • ¼ cup coconut aminos
  • ½ cup sliced green onion for serving

Instructions

  • Heat 1 tablespoon of toasted sesame oil in a large heavy pan over medium heat. Add onion, carrots, and peas and cook for 8 minutes until onions are softened, stirring occasionally. Stir in garlic and ginger and cook for 2 minutes longer. Transfer to a medium bowl.
  • While vegetables cook, chop pork into ½ inch pieces. Increase heat to medium-high. Add another tablespoon of sesame oil to the pan and diced pork. Brown pork for 7-8 minutes, stirring occasionally. Transfer pork to bowl with vegetables.
  • Add beaten eggs to the pan and cook 4 minutes stirring regularly. Transfer to bowl with pork and vegetables.
  • Add remaining oil to the pan. Add cauliflower rice, pork, vegetables, and eggs. Pour coconut aminos over mixture and stir well. Cook for 5 minutes. Divide rice between 4 MPOF black containers and garnish with green onion.
