Ingredients

  • 8 cups vegetable stock
  • 1/4 cup coconut aminos
  • 2 cups dry lentils
  • 1 cup chopped celery
  • 2 cups canned diced tomatoes with juice
  • 1 cup chopped carrots
  • 1 cup chopped sweet white onion
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp minced garlic
  • 1/2 tsp dried thyme
  • 2 bay leaves
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 2 cups chopped kale
  • 1/2 cup chopped parsley for serving

Instructions

  • Combine all ingredients except kale and parsley in a crockpot. Stir well. Turn crockpot to high setting. Cover and cook 4 hours.
  • Stir in kale and continue to cook 5 minutes longer until wilted. Ladle soup into bowls and serve hot garnished with chopped parsley.
